Gingami #3 is a stainless steel developed by Hitachi Metals known for its excellent sharpness and edge retention. While rust-resistant, it is not rust-proof. Remove any rust with a whetstone or metal polish.

These handcrafted knives may exhibit minor imperfections such as scratches or dents. As with most Japanese knives, the blades are thin for optimal sharpness. Avoid twisting the blade or cutting frozen foods or bones, as this may cause chipping or breakage.
