About Misuzu-type knives
The very first stainless-clad knife in Japan
The inaugural stainless-clad knife introduced in Japan traces its origins back to 1946 when Misuzu-type knives were pioneered by the founder, Shinji Suzuki. Emphasizing the concept of corrosion resistance, stainless steel was utilised for the blades, representing an innovative departure from conventional practices of the era.
The meaning of Santoku is âThree virtueâ or âThree usageâ in general. This knife enables you to cut variety of food items such as meat, fish, vegetables, etc. It is suitable for your first knife or general-purpose home use.

Because of cobalt added, it can be quenched in very high temperature so that it has superior hardness. Strong to wear, distort and corrode as well as good sharpness and edge retention.

Most of the minor issues can be fixed by sharpening on a #400-#1000 whetstone. We have tutorial videos for you to learn how to use whetstone. However, it might seem a bit hard work to get it done by yourself.
Kaz's knife is offering "Minor-issue warranty" which covers small chips and rust on the knives you purchased from us. You can always contact us when you feel your knife became dull, chipped, rusty, etc. We fix those minor issues and send the sharpened knife back to you, mostly for free of charge! (depending on how much work is required, also you bear the postage for sending the knife to us)
