Light and slim blade, different to conventional hefty knives

Compared with normal Western knives, this Wa-Gyuto series has much lighter blade. It is suited for those who take on more small sized ingredients rather than chunky food items.

• Weight: You’ll need to try several knives to find your ideal knife weight. One school of thought believes a hefty chef’s knife cuts through foods easier because it “falls” with more force. Manufactured by Takefu Special Steel Co.,Ltd. Contains Carbon 1%, Chromium 15%, Molybdenum 1 %, Vanadium0.2%, Cobalt 1.4%, Manganese 0.5%, Rockwell Hardness 58-60 HRC.

Quality Stainless steel that is recently introduced to the market, used for variety of industrial tools.

Because of cobalt added, it can be quenched in very high temperature so that it has superior hardness. Strong to wear, distort and corrode as well as good sharpness and edge retention.

Suited for both right and left handers as the blade is aligned 50:50 (double bevel).

Handle: Japanese Oak (Nara-no-ki), black lacquer coated

Japanese oak is often used in whiskey barrel for aging Japanese whiskey.

As a knife handle, it is quite lightweight compared to western oak wood, having comparative durability. The black lacquer is applied on top to give elegant feeling. 

 

Each knife comes with an individual knife box, which is good for a storage when not used and is presentable for gift purposes. Use of knife sheath is recommended only when you take the knife outside.
